In the early 20th century, when Mumbai's Indian Jewish community, known as the Bene Israel, first started trading in spices from Gujarat, it brought along their Gujarati cuisine too. The Jewish community and its traders started serving parathas, dosas, kachoris, jalebis, puris, and even homemade Kadai paneer to the city's elite. One of the most popular dishes that the community served was the Gujarati Kadai paneer. The dish uses paneer, or cottage cheese, and is flavored with a blend of mustard, garlic, onion, red chilies, dried and fresh coriander, cumin, green chilies, and red wine, baked in a banana leaf.
According to the Baroda Heritage Society, Kadai paneer was sold by members of the Jewish community as a substitute for cheese at their eateries. Kicking off around the year 1880, it slowly came to be popularised by famous Muslim and Parsi Gujarati restaurants in the city.
As popularised by Kadai paneer dishes, Parsi Gujarati was the first sub-caste of Gujarat who migrated to the city in the 16th century from Surat, as per historians. Most of them came to be known as Old Paris, and eventually, the community was made up of people who hailed from a clan of Zoroastrian merchants.

Ingredients Of Kadai Paneer
- 200gm Boiled calf feet, 200gm Flank, skinned and boned
- 2 Lbs Ghee
- 1 Onion, finely chopped
- ½ Cup Chilli powder
- 2 Cloves Garlic, finely chopped
- 3 green chilies, chopped
- 1tbsp Dried red chili
- 5 Kg Corn
- 2 tsp Salt
- ½ tsp Red chili powder
- 1 cup Curd
- ½ cup Plain Yogurt
- For Ghee
- 1 Medium Onion Ginger

- 1 tsp oil½
- tsp grated ginger
- chili powder
- 1 tsp red chili powder
How To Make Kadai Paneer:
* Fry Onion, Corn, Curd, and Red chili powder in a pan. Make sure that the corn kernels are broken.
* Add Salt, Red chili powder, and chili powder, and mix well.
* Add Salt, Mirchi Powder, Garam Masala, Coriander Powder, Roasted Cumin Seeds, and 1 tbsp water and fry well.
* Add Tomato Puree and fry till the Oil separates and cover and cook on medium flame.
* Then add the Tomato pieces, mix and let the Tomato pieces cook well. The Tomato pieces should stay as pieces.
* After the Tomato pieces are cooked, add 150 ml hot Water and Paneer pieces. Cover and cook for 5 minutes. Add Ghee and remove it from the fire.
