Ingredients:

  1. 1 cup (200 ml) full-fat ghee or butter
  2. 1 cup (200 ml) whole milk
  3. 1 tsp cardamom powder
  4. 1/2 tsp salt
  5. 1 tsp cumin powder
  6. 1/2 tsp coriander powder
  7. 1/4 tsp turmeric powder
  8. 1/2 tsp dry ginger powder
  9. 10-15 sliced onions
  10. 1 red chilli
  11. 2 tsp cilantro
  12. 1/4 tsp garam masala
  13. To taste – Salt and Pepper

Instructions:

1. Heat the ghee and bring it to a boil.

2. Once the ghee starts to boil, add the salt and cumin powder and mix well.

3. Now add the milk in a ladle, and boil it for 30 seconds.

4. Lower the heat and pour in the milk slowly.

5. Mix well.

6. Add the dry spices and stir well.

7. Continue to boil and stir for a minute.

8. Let it rest for a few minutes and then serve.

The Bhallas are softer if the Black Gram is ground in a grinder than in a mixie.

I have done a short cut of this recipe. Which is to say that I have added the Black Gram to the Mixie and added cooking soda and beat it well. You can get soft Bhallas like this too. But those who do not like to use Cooking Soda should grind the Gram and then beat it for 5-6 minutes. Then the Bhallas are soft and hollow.
