Ingredients

  • Yogurt 1cup
  • Kaju 1/2th cup
  • Curry leaves 1 tablespoon
  • Mustard seeds 2 tablespoon
  • Onion 1 large
  • Green chili 4
  • Cumin seeds 1 tsp
  • Garlic 3-4 cloves
  • Cardamom 1
  • Curry leaves 3-4
  • Coriander powder a few strands
  • Ginger 2, finely chopped
  • Red chili 2, finely chopped
  • Ginger 1, finely chopped
  • Turmeric 1 tsp
  • Kashmiri Red Chilli Powder 2 tsp
  • Green chili powder a pinch
  • Red chili powder 2 tbsp
  • Coriander powder 1/2 tsp

1. Add all the ingredients for the gravy to the mixer and grind to a soft paste without any fragments.

2. Heat oil and fry half of the Cashew Nuts.

3. Add Mushrooms and fry until the Cashew Nuts turn lightly golden brown and set aside.

4. Add Cumin seeds, chopped onion, and fry until golden brown.

5. Mix Red Chilli Powder, Kashmiri Mirchi Powder, Garam Masala, Coriander powder and fry thoroughly.

6. Add the ground paste and let it cook for 3-4 minutes, add 350 ml of water and let the gravy cook until the oil separates. Add salt to taste.

7. When the oil separates, add Cashew Nuts and Mushrooms and let it cook for 3-4 minutes.

 8. Add chopped Coriander and some ghee and let it cook for another minute. Add the juice of a half slice of lemon and remove it from the flame.

Tips For Making Kaju Mushroom Masala 

• Here is what I have learned from experience.

• Generally, for Kaju mushroom curry, you will want to add coconut milk and add the jaggery only when the Kaju starts to melt. Also, if you want to increase the flavor of the mushrooms, you can add the red chilies and grated raw ginger at this stage, instead of adding these only when it is time to cook the curry.

• Add more water if the Kaju chunks turn soggy.

• You can serve Kaju mushrooms with parathas, roti, bread, or simply with dal 

• Add rice or roti with the Kaju and it will take on a different taste.

• I use frozen Kaju and am happy with the results.

• Paneer powder or fresh paste is optional. It depends upon your taste preference.

• Kaju mushroom masala can be enjoyed in one sitting.

• It can be stored in the fridge for two days.
